Simple Lunch Recipes You Can Make In a Flash

Figuring out what to make for any meal is never easy, but it’s especially stressful during the workweek. 

Not only are you having to deal with, you know, work, but it feels like there’s just not enough time in the day to make a healthy and delicious meal. And, while ordering takeout requires little effort, that money adds up!

Thankfully, there are simple lunch recipes out there that taste good and take very little time to prepare. 

We’ve already shared a handful of lunch recipes that you can make in less than 15 minutes, but why not offer a few more suggestions?!

Your stomach and your wallet will thank you later.

Greek Cucumber Salad

There are few things better to eat when it’s hot outside than a fresh salad. But don’t worry — this is not just any old boring salad. A Greek cucumber salad requires very few ingredients, but it’s also packed with flavor.

Plus, it’s a great thing to keep in your refrigerator for future meals, as it stays fresh for a while.

Here are the ingredients:

  • Cucumbers
  • Roma tomatoes
  • Onions
  • Black olives
  • Olive oil
  • Crumbled feta cheese
  • Salt and pepper

Once you have your ingredients ready to go, all you need to do is chop them up and throw them into a bowl. Coat the veggies in a bit of olive oil, sprinkle some salt and pepper, and toss it all together. Finally, before you serve the salad, sprinkle some crumbled feta cheese on top. Easy peasy!

Tuna Salad Wrap

Are you a sandwich person but want to switch it up? Try making a tuna salad wrap for lunch instead! It requires next to no effort, but it’ll keep you full through your workday.

Here are the ingredients:

  • 1 can of tuna
  • Diced red onion
  • Diced cucumber 
  • Tortillas
  • Diced celery
  • Mayonnaise
  • Salt and pepper
  • Romaine lettuce (optional)

In a bowl, go ahead and mix together your tuna, red onion, cucumber, celery, salt and pepper, and mayonnaise. It’s recommended to use about ¼ cup of mayo, but you can use as little or as much as you’d like. 

Once your tuna is ready to go, lay out your tortilla(s), and place the tuna inside the tortilla. If you’d like to add a piece of romaine lettuce, which definitely adds a little extra crunch, you can put that on top. Roll up your tortilla once everything is inside, cut it into halves, and enjoy! 

Oh, and by the way, a tuna wrap is best enjoyed with a side of chips.

Eggplant Parmesan

When most people hear the words “eggplant parmesan,” they assume it takes hours to make. But guess what? That’s not the case at all! While it doesn’t exactly take 15 minutes to make, it does take 15 minutes to prepare. Not to mention, it’s a great option if you want to have leftovers for the week.

Here are the ingredients:

  • 2 eggplants, sliced
  • Marinara sauce
  • 2 cups bread crumbs
  • 4 eggs
  • Ricotta cheese
  • Parmesan cheese
  • Salt and pepper

Alright, first thing’s first — preheat your oven to 425 degrees. While your oven is preheating, slice up your eggplants into about ¼-inch thick rounds and pour your marinara sauce (any brand is fine) along the bottom of your casserole dish. 

Then, once your eggplant is sliced, dip each individual piece into the beaten eggs and then into the breadcrumbs. Once the piece is coated in breadcrumbs, place it on top of the sauce in the dish and repeat this until all your eggplant pieces are covered.

Next, place the ricotta cheese on top of every piece of eggplant. Once they’re all covered, coat the eggplant pieces in the marinara sauce and repeat the process with another layer of eggplant pieces.

Finally, sprinkle parmesan cheese over the very top of the dish and put it in the oven for about 35 minutes and enjoy!
